They are planted on gentle slopes and terraces with small parcels, on limestone soils with clay and sand incursions, a clay loam texture, and very low organic matter. The average vine age is around 50 years, with some plots dating back to the 1950s. The climate is oceanic-Mediterranean with continental and Atlantic influences.\u003c\/p\u003e\n\u003cp\u003eHand-picked in 15 kg crates at the beginning of October, the grapes undergo fermentation and aging on their fine lees in a variety of vessels, including barrels, bocoyes and eggs, with periodic stirring of the lees. The wine spends an average of 9 months in new French oak barrels (225 litre) and bocoyes (500 litre), as well as granite and concrete eggs. This diverse aging method imparts a unique character to the wine while preserving its freshness.\u003c\/p\u003e\n\u003cp\u003ePale yellow with golden reflections, the wine is very complex and harmonious, showing notes of citrus fruits, white flowers, subtle vanilla, and toasted nuances from oak maturation.
