Fermentation is deliberately stopped before completion to retain a portion of the natural grape sugars. The wine is then aged in oak barrels for around one year, followed by extended bottle ageing of over 10 years to develop complexity and balance.\u003c\/p\u003e\n\u003cp\u003eLight gold in colour, the wine shows a complex and balanced nose with notes of citrus, fennel, toasted bread, almond and sweet pastry.
