[Style/Color: Sparkling (Champagne)] [Dryness: Dry]

[Variety: Blanc de Noirs and Pinot Noir]

A blend of Pinot Noir grapes different vineyards and vintages, this is the emblematic expression of the Domaine: precision, saline Jength and hedonistic complexity.

Harvested manually in successive passes according to grape ripeness, with careful sorting carried out directly in the vineyard, the grapes are transported promptly to the winery in perforated boxes to maintain their integrity. Vinification involves slow pneumatic pressing followed by static settling, with the addition of selected yeasts and a natural malolactic fermentation. The wine undergoes only slight sulphiting and is lightly filtered after cold stabilisation. It is then aged on its lees for a minimum of 36 months, before disgorgement with low dosage to retain clarity and precision.

Clear and yellow in appearance with subtle golden highlights, the wine opens with a refined and complex aromatic profile, showing layers of white fruits such as pear alongside yellow fruits including peach, apricot and plum, complemented by floral notes of honeysuckle, a gentle hint of spice, touches of citrus and a refreshing minty lift. The palate is generous and mouth-watering, supported by an elegant mineral backbone that provides structure and balance. Best enjoyed within three years to capture its youthful vibrancy, or cellared for up to ten years for added complexity
