Harvested manually in successive passes according to optimal ripeness, with strict sorting carried out directly in the vineyard. The grapes are transported immediately to the winery in small perforated boxes to preserve their integrity. Vinification begins with slow pneumatic pressing, followed by static settling and natural malolactic fermentation, with only a minimal addition of sulphites. The wine is then aged in barrel with light lees stirring for 7.5 months, before a further year of bottle ageing.
Clear and bright, with a yellow hue highlighted by green and golden reflections. The nose is floral and refined, opening with notes of peach, apricot, lightly roasted pineapple and a hint of lime. On the palate, it shows a full yet mineral-driven attack, lifted by vibrant acidity that brings freshness and tension, complemented by tangy citrus notes of grapefruit. The wine finishes clean and precise, offering immediate appeal but with the potential to evolve in bottle, to be enjoyed within its first three years for youthful vibrancy or to wait up to 10 years for added complexity.
