The grapes, sourced from selected varieties and sorted directly in the vineyard, are transported immediately to the winery in perforated boxes. Vinification begins with slow pneumatic pressing, with the “taille” fraction removed, and each variety is vinified separately. After static settling, fermentation takes place with selected yeasts, followed by natural malolactic fermentation, slight sulphiting and light filtration after cold stabilisation. The wine is then aged on its lees for 36 months, before disgorgement with low dosage to preserve its purity.
Clear and pale in colour with gold and green glints, the wine shows intense and complex aromas of fresh candied fruit, almond paste, Mediterranean flowers, honey and sweet spices. The palate is powerful and salivating, with a rich mid-palate lifted by a long, refreshing acidic finish. While already expressive in its youth, it also has the potential to evolve beautifully with cellaring for up to twenty years.
