The grapes are sourced from 45-year-old vineyards in Terrori Côte de Sézanne, including “Les Vallées” (Montgenost) and “Les Foizardes” (Bethon), planted on clay and chalk soils with a south to south-east exposure. After harvest, the juice undergoes an 18-hour maceration before fermentation and maturation for 24 months in 400L barrels, a mix of oak and acacia, to develop structure, complexity, and subtle aromatic nuances.
