Hand-selected and destemmed, the grapes undergo a long cold maceration below 8°C to enhance aromatic complexity, followed by a gentle pressing before fermentation. Fermentation takes place with native yeasts at moderate temperatures to allow gentle tannin extraction while preserving the purity of the fruit. An extended post-fermentative maceration ensures continued skin contact, along with complete malolactic fermentation. The wine is then aged for 26 months in new French oak barrels in the family’s underground cellar.
Intense and deep red in colour with purple hints, the wine shows aromas of red and black fruits, fresh spices, anise and rosehip. On the palate, it is both elegant and complex, with present yet gentle tannins that lend a subtle sweetness. Well balanced and structured, it finishes with a rich aftertaste that lingers.
