100% hand-operated in boxes of 7 kgs. Malolactic fermentation in open tubs of 350 litres, with soft comebacks. Later, ageing took place on lees in a stainless-steel tank of 2.500 litres for 5 months.
Lighter tone of an intense ruby colour. On the nose, clear aromas of currants, sour cherries and red cherries. Aromas of fennel, geranium, star anise and white pepper stand out, very well assembled with mineral and coal touches, typical of the variety. Silky, frank and fresh on the palate, persisting the aromas sensed at the nasal stage together with hints of aromatic herbs, minerals and coal.
