"Contrada Zottorinotto" is located on the northern slope of Mount Etna, at an altitude of approximately 750-780 meters above sea level. The soil is sandy and volcanic in origin, but has excellent drainage. Viticulture in this district is characterized by piedmont climate characteristics: low rainfall during the growing season, strong ventilation, and significant temperature variations between day and night, with temperature swings of up to 18-20°C at times. The average age of the vines is approximately 20 years, and they are trained using espalier and bush vines.
Grapes harvested by hand in small boxes are brought quickly to the winery where they undergo manual selection on a belt. De-stemmed and lightly crushed they arrive at the press where they are softly pressed. The resulting must is placed to ferment, without any temperature control, In 225-liter acacia barrels. After fermentation is finished, the resulting wine rests on the fine lees for about eight months.
Straw yellow with intense golden hues, distinct hints of vanilla, honey, broom flowers and ripe yellow peach. Elegance and persistence on the palate are complemented by extraordinary complexity and savoriness.
